Zucchini Noodles with Pesto

Ingredients

  • 3 medium zucchinis, spiralized into noodles

Pesto Sauce

  • 1 cup fresh basil leaves
  • 1/4 cup pine nuts (or walnuts)
  • 1 garlic clove
  • 1/4 cup olive oil
  • Salt and pepper, to taste

Instructions

  1. Prepare the pesto by combining basil, pine nuts, and garlic in a food processor. Slowly add olive oil while blending until smooth. Season with salt and pepper to taste.
  2. In a skillet over medium heat, add zucchini noodles and cook for 2-3 minutes, just until slightly softened.
  3. Remove from heat, then toss the zucchini noodles with the pesto until well-coated.
  4. Serve immediately, garnished with a few extra basil leaves if desired.
