Zucchini Noodles with Pesto

Ingredients
- 3 medium zucchinis, spiralized into noodles
Pesto Sauce
- 1 cup fresh basil leaves
- 1/4 cup pine nuts (or walnuts)
- 1 garlic clove
- 1/4 cup olive oil
- Salt and pepper, to taste
Instructions
- Prepare the pesto by combining basil, pine nuts, and garlic in a food processor. Slowly add olive oil while blending until smooth. Season with salt and pepper to taste.
- In a skillet over medium heat, add zucchini noodles and cook for 2-3 minutes, just until slightly softened.
- Remove from heat, then toss the zucchini noodles with the pesto until well-coated.
- Serve immediately, garnished with a few extra basil leaves if desired.
